A massive congratulations to Julia Jewers who is through to the national heats of the Nestle Professional Toque d’Or 2019 competition.
Julia is a catering assistant at the Lady Eleanor Holles School in Hampton (Independents by Sodexo). She has been working at the school for almost eight years and last year took the leap to enrol in a Sodexo apprenticeship to become a commis chef.
“I decided I wanted to expand my knowledge of cookery and further my career through Sodexo as I feel like the company wants to help their employees to progress.”
Since enrolling in the HIT Training scheme, Julia has been on five chef academy workshops and two supplier visits.
“The workshops and visits are invaluable to your training as they give a great insight and are really well put together.”
As a result of the apprenticeship scheme, Julia feels more confident and felt ready to enter the Nestle Professional Toque d’Or competition. The competition uses real life challenges to educate and test entrants in a number of areas, such as presentation skills, nutrition, menu creation and food trends and insight. Entrants also have the opportunity to work with and learn from a number of leading industry chefs and business.
As an employer, Sodexo contributes to an apprenticeship levy fund that employees can access.* Managers can use the fund to support employee recruitment and upskilling of their team and employees can use the fund to develop their own careers.
“We were given a brief to create a vegetarian dish that included sustainability, nutrition, health and wellness. With some discussion and guidance from Tom Allen, I came up with a dish of black garlic ramen with smoked tofu and kimchi rice paper rolls.”
Julia’s fabulous dish sees her through to the national heats in March, with winners from that going through to a five-day Grand Final in London this April 2019.
“I really had to push myself out of my comfort zone to enter this competition, and I wouldn’t have done it without Tom’s belief and confidence in me. I’m really looking forward to seeing what happens next!”
Tom Allen, food development director for Independents by Sodexo, said: “I am delighted for Julia in getting through to the national heats of the competition. She has really embraced the training through her apprenticeship and I’m really pleased to see her efforts paying off in this way.”
